Lazy Meatball Dinner

When I saw these lean beef meatballs on offer in the supermarket I knew I had to have them!

This ended up being a perfect lazy weeknight dinner.

Easy Meatballs and Pasta

These meatballs had cooking instructions for the oven rather than on the hob so I added them to a dish and placed in the oven for 20 minutes.

In order to keep things speedy I turned to this jar of pasta sauce and added to a pan to heat.

When the meatballs were cooked I added them into the pasta sauce and stirred in some fresh spinach to wilt.

Served over brown pasta with a sprinkle of parmesan and a twist of black pepper.

Voila! Easy pasta and meatballs!

Chilli Nachos

Oh my!

Some days you really need a treat and this serving suggestion really hit the spot! Last night I had planned chilli for dinner (leftovers from the freezer) but at the last minute I really didn’t fancy it.

I usually serve my chilli with rice and sour cream. Yummy but I know I am missing out. There are loads of creative ways to serve a chilli!

At 37 weeks pregnant I am finding that by the evenings I am getting really tired, especially when I have been busy during the day. Yesterday I had lunch out with my friends from my antenatal class (I know, its a hard life!) and then spent a couple of hours on chores around the house. By 6.30 I was tired and not inspired to stand at the cooker – even though reheating chilli and boiling some rice is hardly difficult!

A quick exchange with the husband showed that we both fancied a treat but didn’t fancy the hassle of going out.

And then it came to us… we could make our favourite chilli nachos at home!

Chilli Nachos

Ingredients:

  • 1 serving of your favourite chilli recipe
  • Tortilla chips
  • Grated cheddar
  • Sour Cream
  • Guacamole
  • Salsa

Method:

  • Add the chilli to a pan and heat over a medium heat.
  • Put the tortilla chips into a bowl and sprinkle with grated cheddar cheese.
  • Place under the grill until the cheese melts.
  • Top the chips with the heated chilli.
  • Top with your favourite toppings (we went for the full restaurant experience and used sour cream, guacamole and salsa).
  • Dig in and enjoy!

Doesn’t this look amazing?? Ok not the healthiest but hey, everything in moderation! I am now inspired to try some other exciting serving suggestions for the rest of my freezer chilli!

Some ideas…

I was looking through the pictures on my camera this morning and realised that there were lots of ideas which I haven’t had a chance to show you yet.

So here is a quick ideas post for you…

Breakfast:

French Toast with berries and yogurt

Made using cinnamon raisin bread, egg, milk and cinnamon. Topped with strawberries, blueberries, greek yogurt and honey.

Cereal, berries and yogurt

One of my favourite brekkies to take to work. The yogurt is much more filling than milk on the cereal. This is Special K, Greek yogurt and blueberries.

Lunches

Tuna Melt Panini

Season a tin of tuna as liked (I like to mix in some sweet chilli sauce) and add mozzarella cheese for melty cheesy goodness! Toast on a Panini grill.

Cheesy English Muffins

Lightly toast an English Muffin, then add cheese (and I like Worcestershire sauce). Top with halved cherry tomatoes and grill.

I was excited to find that my local supermarket has installed a salad bar. This was a great speedy lunch.

Slow Cooker Casserole

I have been wanting one of these for ages and we finally got around to getting one earlier this month. I figure that it will really come into its own when I go on maternity leave in October and after the baby comes I will be able to make some nice warming dinners with little effort in the kitchen.

For my first cooking attempt I made a chicken stew. Chicken, carrots, potato, onion, swede and leeks. Plus a couple of small dumplings – not healthy but they really make this dinner!

This was a great dinner – really tasty. I can’t wait to experiment more with the slow cooker.

Catching up

Wow the last few weeks have been crazy – time is flying by and its hard to believe I am 19 weeks pregnant already! Almost half way through my pregnancy 🙂

The bump is developing nicely!

The background in this photo is the caravan in Hastings where we spent last week with my parents, sister and niece. We got lots of Auntie and Uncle time which was great practice 🙂

I’ve not been too organised lately with food so now we are back we are trying to get back to basics.

Dinner last night, was a comforting favourite, quiche and Caesar salad.

I used a low fat Caesar salad kit from Tesco and heated up some leftover Quiche Lorraine. Yummy and comforting!

While we were away, I treated myself to a new lunch bag – isn’t it cool! Today I loaded it up with a yummy packed breakfast and lunch.

For breakfast, I had a Total 0% Greek Yogurt, Special K and sliced strawberries. I also packed 2 Babybel Lights, apple, dried apricots and a cinnamon raisin cookie. Missing from the picture is a turkey salad and mayo sandwich which I ate for lunch.

I seem to have a need to snack all day at the moment! I’m trusting my body and going with it, which seems to be working well.

Oh and look at these flowers that my mother in law bought me this weekend.

Aren’t they beautiful? They are really brightening up the kitchen at the moment, which is a blessing as the weather outside is really miserable at the moment.

Lets hope it brightens up soon 🙂

Simple Stir Fry

So glad to be back to the blog! I find it so helpful for keeping my food intake on track and inspiring me to be creative in the kitchen.

I wanted to take a minute to explain what changes my pregnancy is making to my diet and how that might affect what you see on the blog.

The most important thing to say is that yes, all diet and weight talk is gone! I have been wanting to get away from any obsessions with weight loss, calorie counting etc for ages in favour of a healthier overall diet, and here is my perfect opportunity!

One of the main changes in my diet through the last couple of months has been that the volume of food has increased! I am sooooo hungry almost all the time at the moment. It was a bit scary at first but I decided to trust my body and see what happens… and it hasn’t let me down. My eating is heading closer to the idea of 4-6 small meals a day. Currently 3 meals with 2-3 substantial snacks. And the type of foods are changing. Dairy has become my friend! Cheese, yogurts and milk feature a lot in my eats at the moment as they keep my fuller for longer and sit well on my stomach. If anything has decreased, I would say it was protein –its just not something I fancy eating a lot of at the moment.

Dinner tonight was an old favourite – chicken noodle stir fry. Stir fries are great – fresh and tasty, and super fast for a work night.

Soup and cereals

I ended up having an early night last night as I felt exhausted by 10pm. I woke up at 7.15 so that was a nice 9 hour sleep!

After reading in bed for a while, I headed down to make some breakfast. Today I really fancied cold cereal. A look in the cupboard showed that I had 3 almost finished boxes of cereal, so I mixed them up this morning for a cereal surprise!

In the mix was Special K, Cheerios, All Bran and Quaker Oat Crisp, topped with skimmed milk.

Along with a large glass of water! Loved the variety in this bowl – mixing up cereals is one of my favourite things!

After breakfast I needed to go to the supermarket to stock up. While there I saw this soup on offer and decided it would be perfect for our lunch.

Check out this wholegrain part bake baguette. After 12 minutes in the oven it was bread heaven!

Loved this soup – the flavour was amazing and I loved the kick of chilli. The bread was yummy, perfect for dipping!

Now sitting at my laptop to blog, while I eat this yummy dessert!

This is 2 tinned peach halves, a spoonful of greek yogurt and a sprinkle of chocolate granola!

Great snack – I think this will be making a reappearance soon!

Off to my in-laws for a Roast dinner tonight – chicken – my favourite. Then its back to work tomorrow. This weekend has gone so quickly!

A Perfect Panini

Just checking in with a quick lunch idea today. We headed into town for a bit of retail therapy this morning and the weather was really cold and wet. By the time we got home we were in need of something to warm us up.

I combined some of my favourite flavours and came up with a Chicken, Pesto and Mozzarella Panini.

I spread half of a Panini roll with pesto and layered with sliced chicken breast and grated mozzarella.

After a few minutes in the Panini press we had toasty, cheesy perfection!

I served my panini with carrot sticks and hummus,  cherry tomatoes and a couple of the husbands crisps.

Loved this combination, the pesto soaked into the bread and tasted great. Love melted mozzarella in Panini’s, its so gooey and creamy!
