So glad to be back to the blog! I find it so helpful for keeping my food intake on track and inspiring me to be creative in the kitchen.
I wanted to take a minute to explain what changes my pregnancy is making to my diet and how that might affect what you see on the blog.
The most important thing to say is that yes, all diet and weight talk is gone! I have been wanting to get away from any obsessions with weight loss, calorie counting etc for ages in favour of a healthier overall diet, and here is my perfect opportunity!
One of the main changes in my diet through the last couple of months has been that the volume of food has increased! I am sooooo hungry almost all the time at the moment. It was a bit scary at first but I decided to trust my body and see what happens… and it hasn’t let me down. My eating is heading closer to the idea of 4-6 small meals a day. Currently 3 meals with 2-3 substantial snacks. And the type of foods are changing. Dairy has become my friend! Cheese, yogurts and milk feature a lot in my eats at the moment as they keep my fuller for longer and sit well on my stomach. If anything has decreased, I would say it was protein –its just not something I fancy eating a lot of at the moment.
Dinner tonight was an old favourite – chicken noodle stir fry. Stir fries are great – fresh and tasty, and super fast for a work night.
This one has ginger marinated chicken, red & yellow peppers, green beans, baby corn and wholemeal noodles.
