Recipe – Chicken and Vegetable Korma Curry

I loved this quick easy curry dish. This recipe uses the veggies I had left in my fridge at the time but you could add any others that take your fancy.


  • 1 pepper, sliced
  • 1 chicken breast, diced
  • Korma curry paste
  • ½ can reduced fat coconut milk
  • Spinach


  • Fry peppers until softened
  • Add chicken and fry until coloured
  • Add Korma paste and fry for a couple of minutes
  • Stir in coconut milk and simmer for 5 minutes
  • Add spinach and stir until wilted
  • Serve with rice
